For a decade, if you lived in Rockwall and someone asked where to eat, the answer bent toward the water. The Harbor's boardwalk, the amphitheater lawn, the patios facing the sunset side of Lake Ray Hubbard. That answer is about to get more complicated. A four-tenths-of-a-mile stretch along I-30, anchored at Sunset Ridge Drive, is filling in with a distinct kind of restaurant, and the last piece lands this fall.
The through-line is not the food. It is the format. Rooftops, self-pour walls, patio seating stacked above surface parking, all designed for the mid-week visit rather than the destination evening. If you already live here, this is the shift that will show up in your calendar first.
The Corridor Nobody Has Named Yet
The addresses tell the story before the marketing does. HG Sply Co. is going in at 2651 Sunset Ridge Dr, Rockwall, TX 75032, on land UNCO has owned since 2016. Vidorra opened at 2620 Sunset Ridge Harbor Heights, near the western shores of Lake Ray Hubbard and the harbor district. We The People Taproom operates at 165 E Quail Run Rd, Ste 103, Rockwall, TX 75087, a short jog north off the same I-30 spine.
Three restaurants, three operators, one corridor. What they share is the decision to build indoor-outdoor space with a view of the lake without actually sitting on it. That is the tell.
A Timeline You Can Eat Through
The corridor did not appear at once. It stacked in phases, and reading the sequence is the fastest way to understand what fall 2026 is finishing.
- December 5, 2024 — Vidorra opened at 2620 Sunset Ridge Harbor Heights, off I-30 near the western shores of Lake Ray Hubbard and the popular harbor district, in a 5,400 square foot space with an airy patio perched above the lake. Milkshake Concepts, the Dallas group behind The Finch, Harper's, and Serious Pizza, put a marker down first.
- February 2026 — We The People Taproom hosted a soft opening at the beginning of February, then a grand opening celebration on Thursday, March 5, 2026 from 4pm to 9pm.
- May 7, 2026 — We The People Taproom launched two new daily experiences, a Snack Hour and an extended Happy Hour, designed to give guests more flexibility, more flavor, and more value than traditional offerings in the area. The corridor's newest arrival was already reshaping its own dayparts by month three.
- Q4 2026 — HG Sply Co. is set to bring its signature menu and rooftop dining experience to Rockwall in Q4 of 2026. This is the piece that changes the corridor's ceiling, literally.
What HG Changes About A Wednesday
The HG Sply Co. rooftop is the outlier. The first floor is 6,800 square feet with a 6,300 square foot rooftop and a seating capacity of 400+. The Rockwall space will feature a rooftop with stunning views of Lake Ray Hubbard and the Dallas skyline. For scale, that is roughly two-and-a-half Vidorras of seating in one building, with more than half of it upstairs and open-air.
The rooftop at HG was planned for this site since acquisition, but UNCO decided to wait until the surrounding development was complete to ensure the rooftop maintained a clear view of Lake Ray Hubbard. Read that sentence twice. A hospitality group sat on I-30 dirt for the better part of a decade because they were solving for a sightline. The land was never going to be a strip pad.
"Our goal has always been to build restaurants that fuel people's lives and bring communities together," said Sameer Patel, CEO and Co-Founder of UNCO.
UNCO is not new to Rockwall. The DFW-based hospitality group operates 12 restaurants, including two in Rockwall, one of which is Culpepper Cattle Co. on the downtown side. What is new is the format. Culpepper is a room-and-a-booth steakhouse. HG Rockwall is a rooftop with 400-plus seats above I-30. Those are not the same business.
The Self-Pour Middle
Between the Vidorra weekend and the HG rooftop, the corridor needed a weeknight. That is the role We The People Taproom quietly stepped into.
The mechanic is the unlock. We The People Taproom is Rockwall's first and only self-pour taproom featuring the Pour My Beer system, a wall of taps where guests pour their own beer, wine, and cocktails by the ounce. That format solves a specific problem a lot of Rockwall households recognize. Two adults, a Tuesday, one wants a stout, the other wants half a glass of a rosé, neither wants to commit to a full pour or wait on a server between rounds.
The menu leans into place-name storytelling rather than a single cuisine. The kitchen serves items like Philly Cheesesteak Eggrolls, Alaskan Fish N' Chips, Chicago Hanger Steak Frites, and Louisiana Alligator Skewers, an American-regional roulette designed for a wall of taps rather than a wine list. The extended Happy Hour rollout in May suggests the operator is treating the room as a bridge daypart, between lunch and dinner, rather than a destination table.
Downtown Still Owns The Occasion
None of this displaces the historic square. It reframes what the square is for.
Wade's Landing, from a veteran Dallas hospitality team, opened at 308 N. Fannin St. in downtown Rockwall in the former Roundabout space in March 2024. OpenTable reviewers rank The Oar House, Wade's Landing, and Standard Service among the restaurants with the best ambiance in Rockwall. That is the occasion pole. Anniversaries, out-of-town in-laws, the night you actually want to park once and walk to a cocktail.
Culpepper Cattle Co. sits on the same side of the market. Culpepper is the third iteration of the iconic Rockwall restaurant, opened Friday, September 29, 2023, from UNCO, the DFW-based hospitality group behind concepts including HG Sply Co., Leela's Wine Bar, and HERO by HG Sply Co. That last detail matters when the same operator opens a 400-seat rooftop across town. UNCO now runs the corridor and the square, tuned to two different jobs.

The corridor's number to watch is 400-plus. No other single Rockwall dining room comes close on outdoor seat count, which is why the fall opening will be felt at the reservation layer across the whole market. Weekend demand that used to compete for Harbor patios has a new pressure valve on the I-30 side.
The Resident's New Weekly Map
Put the pieces together and the practical outcome is a redistribution of nights.
The Tuesday self-pour, the Thursday margarita on a patio that faces the lake without actually being on it, the Friday rooftop with a Dallas skyline view once HG opens. The Saturday downtown walk for Wade's Landing or Culpepper stays intact, because the corridor is not designed to replace it. What changes is the mid-week default. For years the honest answer for a Wednesday in Rockwall was cook at home or drive to the Harbor. By December, there will be three corridor rooms within a mile of each other, all optimized for the exact kind of low-friction visit that mid-week eating actually is.
There is also a supply signal worth naming. HG's crowdfunding campaign raised more than $300k in less than 30 days, and its three established locations generated $19.8 million in revenue in 2023, with its Alliance, Texas location raising $760K from 151 investors in 2024. Operators do not put a 6,300 square foot rooftop and a community-ownership campaign on a market they read as thin. The corridor is being priced as a long-hold asset, not a one-season experiment.
If you have owned in Rockwall for more than a few years, the map you carry in your head is due for an update. The Harbor still runs the Thursday concert. Downtown still runs the anniversary. But the corridor between them, along Sunset Ridge and Quail Run, now runs the ordinary week. That is a quieter change than a new stadium or a new bridge, and it will show up in property conversations for years before anyone writes it down as a headline.
